Hawaii Sea Spirits (HSS) has launched an exclusive distillery rum called Brum.

Claimed to be crafted in the solera-blend style, Brum is made using a selection of aged rum sourced worldwide.

HSS master distiller Bill Scott said: “We searched artisan cellars around the world and individually selected elegant rums that have been ageing four to 12+ years.

“They represent a multitude of styles and are selected based on character, profile and quality. We bring the assortment back to Hawaii, blend them together along with rum spirits distilled at our facility and place them into recommissioned bourbon barrels spiked with hand-charred Kiawe staves from retired Kiawe trees on our 80-acre farm.”

A blended rum batch was aged for one to two years before being reviewed by the master distiller on a regular basis for aroma, taste and consistency. Upon reaching an optimal stage, the spirits were drawn from the barrels and blended with deep ocean mineral water to obtain an 80-proof beverage.

HSS claims that Brum rum offers a rich, buttery flavour that is balanced in seasoned oak barrels and finished with sweet tropical fruit flavours.

HSS founder and president Shay Smith said: “Brum releases will be limited to small batches based on perfecting the spirits and the quantity available at the time of release.

“This and each future release will be our Master Distiller’s artistic expression and available in extremely limited quantities exclusively at our distillery for connoisseurs and collectors.”

HSS’s Ocean Organic Vodka is distributed throughout the US, Canada, South Korea and the Caribbean. It operates a distillery and 80-acre organic farm on the island of Mauithat, Hawaii.
