Scotland-based distiller William Grant & Sons has unveiled a new design and flavour profile for its peated single malt whiskey Ailsa Bay.

William Grant & Sons’ master blender Brian Kinsman and his team created the new flavour profile for the peated single malt whiskey, which is said to be more mellow and complex with a balance of smoky and sweet flavours.

Kinsman said: “The Ailsa Bay distillery continues to allow us to develop incredible whiskey through its ability to create different styles under the one roof.

“This new expression has allowed us to evolve the flavours and push the balance in taste, without compromising on the quality of the liquid.”

The new flavour profile is expressed as an increase of sweetness parts per million (SPPM) from 11 to 19, and a change in phenol parts per million (PPPM) from 21 to 22.

William Grant & Sons director Peter Gordon said: “The first release of Ailsa Bay was about trying to create a very heavily peated whisky with all of the sweetness and smokiness we could muster, but also dial down some of the medicinal notes that characterise some peated whiskies.”

With 48.9% alcohol-by-volume (ABV), the new Ailsa Bay will be launched at on-trade and off-trade networks from next month in Australia, Finland and select UK retailers for a recommended sales price (RSP) of £55.00 per 70cl bottle.
